Sola Gratia...by Divine grace alone

This is my first blog post and as the title implies...I am making my way through this life only by His grace. God is my Redeemer, my Rock, my Hiding Place...He is forever gracious and always faithful to me. I am forever His and thankful. Sola Gratia is Latin for, "by Divine grace alone." He is the one that has turned my heart toward Himself. I want to live my life to glorify Him. I am looking to Him for all that I need and trusting Him because I know that He is able. Lately I am thinking of this verse...and looking to Him!
"For the gracious hand of our God is on everyone who looks
to Him." Ezra 8:22

I have wanted to start a blog for some time and especially
to participate in some of the blog carnivals etc.
This post is for the carnival at The Nourishing Gourmet.

Today I made a delicious soup for my family. We are
vegetarian and gluten free and working on becoming sugar
free as well. I like the idea of nutrient dense food
and have read quite a bit by Joel Fuhrman. Anyway, this
soup is a recipe from my friend, Fran. It's frugal (free
zuchini from gardens!) and delicious...especially
for Fall. :)

Zucchini Soup
3# Zucchini and yellow squash
1 c onion
1 c green pepper
1 c parsely (I omit as I don't usually have it on hand)
2 c vegetable stock (I omit as am trying to lower sodium)
2 c water
2 T cumin
1 1/2 tsp sea salt (I omit and use herb/salt at the table)
1/4 tsp white pepper (omit...cayenne in my herb/salt shaker)

Bring to a boil, turn down and simmer until tender. Blend all.

Additional options:
peas, corn, diced carrot
potato, corn, cheese
rice, peas, corn, carrots
lentils, kale, lemon juice
chuncked up veggies of any type that you enjoy.

Heat until your additional ingredients are tender.

Enjoy with salad and muffins or crudites and bread...pumpkin
bread and cheese would be a perfect addition. (I miss cheese!)
Today we had celery and carrot sticks, rice crackers, and
then crushed corn chips on top.

I hope you will try it and hope that you enjoy it.
Let me know your favorite variation!
